Crockpot Jerk Pork & Steamed Rice

So, thanks to a visit of my favorite grocery store, Publix,  we had a new meal for dinner and it was delicious.  

Prep Time: 9 hours   Serves: 4 
Publix pre-packaged Jerk seasoned pork shoulder
Green Bell Peppers
2 cups of White Rice 

1) Put season meat in crocked and let cook 5 hours (on high) or 7 hours (on low). 
2) Add white rice to boiling water in medium size boiler. 
3) Rinse cooked rice thoroughly to remove excess starch. 
4) Lay bed of rice on plate. 
5) Lay one medium scoop of meat, onions, and peppers on rice. 
6) Enjoy! 

Want to add something extra to the meal?  Try spicy corn on the cob. 

Ingredients for corn: 
3 fresh ears of corn (or frozen corn on the cob)
Real Butter (3 tablespoons)
2 teaspoons of paprika
1 teaspoon of cumin 
2 teaspoons of red pepper 

1) Shuck corn
2) Cut each ear corn in half. 
3) Cook corn until kernels are nice and plump. 
4) Drain water from corn. 

Directions for spicy butter: 
1) Take room temperature butter and mash. 
2) Add seasonings. 
3) Mix seasonings fully with butter. 
4) Scoop butter on corn. 



Mexican Cornbread Muffins
I like a good buttery Mexican cornbread muffin every now and then. Not a big fan on the mixture that comes in the bag, so I made my own. 

Corn Meal (2 1/2 cups)
Self-Rising Flour (1 cup)
3 medium eggs (room temperature)
White sugar (1/4 cup)
Butter (1/2 cup-melted)
Milk (2 1/2 cups)
Diced jalapenos (1/2 cup)
Whole Kernal Corn (drained 1/2 cup)

1) Place corn meal, flour, and sugar in a large mixing bowl. 
2) Stir all dry ingredients to mix together. 
3) Add melted butter, eggs, and milk to dry batter. 
4) Stir until you have a creamy batter
5) Add jalapenos and corn to batter. 
6) Mix well. 
7) Grease muffin pan

*now I also like to add butter to the muffin pan. so I take a small amount of butter and place in each muffin holder and place in over to melt.* 

8) Take an ice cream scooper and scoop batter into the melted butter in muffin pan.
9) Place in oven at 375°. 
10) Let cook until golden brown, which is normally around 25 minutes. 
11) Remove pan from oven. Take a toothpick and stick in each muffin. If it comes out clean, muffins are done. 
12) Spread butter over muffin. 


This is great with a soup or any type of meal! 


Shrimp and Chicken Alfredo Pasta

This is my favorite type of meal when I go out to a restaurant. I mean you can never go wrong with this type of meal.  So why not cook it at home?!?!

Medium Size Shrimp (Peeled and Devein)
Boneless Chicken Breast 
Penne Pasta

Ingredients for Alfredo Sauce: 
Heavy Whip Cream (1 quart)
Parmesean Cheese (1 1/2 cups)
Garlic Powder (4 tbspn)
Butter (1/2 cup)

1)  Boil water for Pasta. Drop 1 tspn of salt in boiling water. Place pasta in boiling water.
2) Dice chicken breast and cook in skillet with olive oil. You can season your chicken, if you desire.
3) After your chicken is done, remove from heat.
4) When pasta is done, drain access water from pasta.
5) In a separate boiler, put 1/4 cup of water to boil.
6) When reacher a high boil, place shrimp in a drainer and sit on top of boiler to cook from steam.
7) Once shrimp comes to a white and light red color, remove from steam. Shrimp is done.
8) Place pasta, chicken, and shrimp in a large boiler and mix thoroughly togther.

Directions for sauce:
1) Pour heavy whip cream in skillet on medium heat.
2) Pour melted butter in whip cream.
3) Stir completely so it will mix well and not stick.
4) Pour in parmesean cheese.
5) Stir to mix.
6) Put in garlic powder
7) Stir until sauce thickens up. (5 minutes max)
8) Remove sauce from heat.
9) Pour sauce over pasta mixture.

Mix pasta, meat, and sauce thoroughly. Let cook for 15 minutes. Remove from heat. Top dish with a little creole seasoning. Serve dish with some garlic bread and DINNER IS SERVED!


Homemade Brownies

What better way to end a rainy day with some warm brownies?!?!? I truly enjoyed these and so did my family. 

Ingredients needed: 
1 cup of all purpose flour
2 larges eggs
2 tsp of vanilla extract
1 cup of sugar
1/2 cup of butter (melted)
1 cup of cocoa powder
1/3 cup of milk
1/2 cup of chocolate chips (optional)


1) In a medium sizse bowl, mix your eggs, sugar,butter, and vanilla extract.
2) Add all dry ingredients to wet mixture (slowly).
3) Mix well until all lumps are out.
4) Grease a 9" baking dish and pour in mixture.
5) Bake for 20 minutes.
6) Stick a toothpick in brownie. If it comes out clean, your brownie is done!

Serve and enjoy with a nice glass of milk or a cup of coffee!! Yummy!


Homemade Apple Pie

There is nothing better than a homemade apple pie on a relaxing fall evening. This is my own personal recipe for this. Enjoy!!!

Ingredients Needed: 
7 small Granny apples (peeled)
2 Pillsbury Pie Crust
1/3 cup of Ground cinnamon
1/3 cup of flour
1/2 cup of white sugar
1/3 cup of brown sugar
1 tsp of nutmeg
1/2 stick of butter

1) Slice each apple. Make sure the core is out of the apple. 
2) Unroll each pie crust and place on a cookie sheet to become room temperature.
3) In a large bowl, place apples, cinnamon, flour, white & brown sugar, and nutmeg. 
4) Mix thoroughly to make sure each apple is covered with seasonings. 
5) Place one pie crust in a 10-inch baking dish. 
6) Fill apple filling in pie crust. 
7) Take butter and place pieces throughout 
8) Take other pie crust and cut into vertical lines. 
9) Place vertical pieces of the crust and place each individual slice over the filling.
10) Take a fork and mashed down the edges of the crust. 
11) Cook pie at 350° for 25 minutes
12) Apply butter with brown sugar on crust of pie.
13) Cook pie at 350° for 15 miuntes. 

Cool for 15 minutes. Enjoy with a nice scoop of vanilla ice. 


Banana Nut Bread

I love making banana nut bread. It's one of my favorite fall recipes.  

Ingredients needed:
1 1/2 cup of all-purpose flour
2 cups of mashed ripe bananas
4 small eggs 
1 cup of butter or margarine 
2 tsp of vanilla flavor 
2 tsp of baking soda 
1 tsp of salt 
1 tsp of ground cinnamon 
2 cups of white sugar 
1 cup of chopped walnut pieces 

1. Pour all ingredients in large mixing bowl  and mix very well until you have a liquid batter. 
2. Take loaf pan and grease and flour pan. 
3. Pour mixture in loaf pan and make sure it is even.  
4. Put in oven and bake on 375' for 1 hour and 15 minutes.
5. After cooking time is completed, take a butter knife and stick in all the way through.  Make sure you have a clean knife. 
6. If knife is dry, that means your loaf is ready.
7. Let cool for about 15 minutes

 This is also a nice breakfast treat. 



strawberry shortcake

I can eat this every day! This is my own personal recipe of a strawberry shortcake. After trying it the 2nd time around, I got it right on the 2nd

Ingredients for cake: 
2 cups of Cake Flour
1 cup of Granulated Sugar
2 tsp of Vanilla Flavor
1 tsp of baking powder
1 cup of water
1/3 cup of vegetable oil
1 tsp of salt
3 large eggs

Ingredients for filling: 
1 (8oz) Cool Whip
5  (medium size) strawberries (diced)
1 tsp Vanilla Flavor
1 cup of Confectioner Sugar

Ingredients for icing:
1 (8 oz) Cool Whip
1 cup of Confectioner Sugar
4 (medium size) strawberries

Directions for cake: 
1) Pour Eggs and Sugar in mixer. Mix until you fluffy texture. 
2) Pour in Cake Flour
3) Pour in vanilla flavor, baking powder, salt, oil, and water.
4) Make sure all ingredients are mixed well together until you get a liquid batter. 
5) Grease (with butter and flour) 2 9" round cake pans. 
6) Pour in batter evenly. 
7) Place in over at 350° degrees for 20 minutes
8) After cooking, take a toothpick and stick in cake. If toothpick comes out clean, cake is done. 
9) Place on parchment paper to cool

Directions for filling: 
1) Take cool whip and strawberries and flip mixture until all strawberries are completely covered. 
2) In mixture, pour in confectioner sugar and vanilla flavor in whip cool and strawberries. 
3) Stir until you get a liquid whipped filling. 
4) Place filling in a bowl with a lid and place in the refrigerator to chill and thicken. 

Directions for icing: 
1) Take cool whip, confection sugar, and vanilla flavor and place in a bowl to mix. 
2) Don't whip hard because you will still need the fluffiness in the cream to stay for the icing. 
3) Place icing in a bowl with lid and place in freeze for 15 minutes. 
4) Slice strawberries to spread/decorate top of cake

To complete the cake: 
1) Take one cake and place on cake plate. 
2) Take filing and spread openly on the bottom layer of cake. 
3) Take top cake layer and place on top of filing. 
4) Take chilled icing and spread over the entire cake. 
5) Spread/decorate the strawberries as desired on top of cake. 
6) Place cake in refrigerator for 25 minutes to gel together. 

Last but not least...ENJOY!!! 
Whew, that was a lot of work to do but it was so worth it! If you are like me, I like to drink either coffee or hot tea with my sweets! 


semi-homemade mixed berry loaf 

This is a quick and delicious recipe that I just 
added a little personal touch to it.  I’m sharing my way of doing it.

1 bag of Martha White’s Blueberry muffin mix
1 bag of Martha White’s Strawberry muffin mix
1 cup of Milk
½ of Martha White’s All purpose flour

1 pack of Philadelphia Cream Cheese (must be room temperature)
1 ½ cup of Confectioner sugar
1 medium size lemon
1 tsp of vanilla flavor

Directions for loaf:
1)      Pour the muffin mixes in a medium size bowl.
2)      Pour the milk, and additional flour in the bowl.
3)      Mix very well until all of the mixture is in a liquid format.
**You may add more or less water for the texture of the mixture**
4)      Take a bread loaf pan and grease with pan spray. (I personally like the
Pam butter flavor pan spray). *Make sure you get all of the edges and corners
with the spray.
5)      Pour liquid batter in pan and place in over on Bake 375° degrees for about 25 minutes.
Make sure your loaf is cooked thoroughly by sticking a knife in to make sure it comes out clean.
6)      After loaf is done, place loaf on parchment paper on cooling rack to cool. Let cool for about 15 minutes

Directions for icing:
1)      Take room temperature cream cheese and place in a small bowl
2)      Pour in the confectioner sugar
3)      Mix well until you get a smooth texture
4)      Add tsp of vanilla flavor
5)      Take medium lemon, cut in half, and squeeze in juice.
6)      Continue to mix the ingredients until you get a smooth texture and flavor. 

Final step: 

1)     Spread icing over loaf as desire. 

Enjoy with either a nice glass of hot tea or cold milk!!!



This particular item is a hit in my home and we can eat it either for breakfast or dinner. I have been asked what I put in mine several times, so I will share with you all my recipe. 
1 can of Double Q Pink Salmon
Garlic Salt
Black Pepper
2 medium size eggs
1/2 cup of all purpose flour
1/2 cup of diced onions

1) After opening the can of salmon, drain all of the juice from it. 
2) Split the salmon in half to pull out the bones
3) Mash salmon up to make sure it all mix well with ingredients. 
4) Mix eggs, flour, and onions in with salmon. 
5) Stir very well until mixture spreads well. 
6) Add Garlic salt and pepper to mixture. 
7) In a skillet, add 3 tblsp of cooking oil 
8) Scoop enough mixture to make a 1 1/2 inch thick patty and place in skillet. 
9) Allow each side to cook thoroughly for 4 minutes each. **You may flip them as you please to cook harder and darker**

I always serve my salmon with white rice and biscuits. YUMMY!!! Enjoy! 


Flat Bread Multi-grain Supreme Pizza

Love pizza? But don't want all of the calories that comes with it? This one is only 430 calories!! 
1- Joseph's Flatbread Multi Grain 
1/4 cup of pizza sauce (I used the Publix brand)
14 slices of Turkey Pepperoni (Publix Brand again)
1/4 cup of Mozzarella Cheese (yep, Publix Brand
2 tbsp of Lindsey's California sliced black olives
1/2 cup of Jimmy Dean Turkey Sausage Crumbles
1-whole white mushroom
1/4 cup of sliced green peppers
1/4 cup of sliced red onions

1) On flatbread, spread the pizza sauce all over except directly in the corners
2) Place all toppings on flatbread
3) On a baking sheet, place flatbread pizza in stove on 375 degrees
4) Let pizza cook for 15 minutes.
5) ENJOY!!!! 


Grilled Chicken & Turkey Bacon Spinach Ranch wrap

Want something good and healthy, well try this and you will surely enjoy it! 
1 cup of grilled chicken strips (fully cooked-frozen)
2 slices of Butterball Turkey Bacon 
6 Baby spinach leaves
1/3 cup of 2% Milk cheese (either slice or shredded) 
*I didn't have shredded at the time, so I used sliced*
2 tbsp of low fat ranch dressing
1 large flour tortilla

Place grilled chicken in heated skillet to thaw and brown
Cook turkey bacon on each side for about 2 minutes each (if you like crunchy bacon, add an extra 2 minutes on each side)
Take the flour tortilla and heat up in skillet for one minute on both sides
In a vertical shape in the tortilla, place chicken, bacon, cheese, spinach, and ranch dressing in center of tortilla. 
After all ingredients have been added in, grab the top and bottom of tortilla and fold over. The grab the right side of tortilla and fold over. Roll the remaining of the tortilla to meet up with the ride side of the tortilla. It will look like a burrito. 



Chicken Alfredo with broccoli

A delicious and easy meal that the family will be sure to love! 
2 lb Boneless Chicken Breasts
1 Large Bag of Penne (or Fettuccine) Pasta
1 bag of frozen (or fresh) Broccoli 
1 jar of Ragu Classic Alfredo Sauce
1 cup of water
2 tbsp of Margarine
Salt and pepper

Prep Time: 25 minutes
Cook Time: 1 1/2 hours
Serves: 6 people

1) Boil chicken breasts until completely done.
2) Remove chicken breasts from heat and rinse off.
3) Add pasta to hot boiling water.
4) Add frozen (or fresh) broccoli to half done pasta
5) Allow brocolli and pasta to finish cooking thoroughly. 
6) After pasta and brocolli has cooked fully, drain and rinse off. 
7) Mix chicken, pasta, broccoli, Alfredo sauce, margarine, and 1 cup of water in large boiler and stir to until meal is completely covered with the sauce.
8) Cook mixture on low heat. 
9) Add salt and pepper to taste. 

Serve to your family with some delicious garlic bread and ENJOY!!! 

Beef Gravy Pasta - Crock Pot Dish

Something quick, fast, and easy to make ALL in the crock pot! 
1 pk of Ground Beef (or Ground Turkey)
1 Large Bag of Egg Noodles
1 pack of Brown Gravy Mix
3 cups of water
Salt and pepper

Prep time: 15 minutes
Cooking time: 3 1/2 hours
Serves: 6 people

1) Place meat and 1 cup of water in crock pot. Let meat cook for about 2 1/2 hours on high. 
2) Drain grease and water from meat. 
3) Place meat, egg noodles, brown gravy, and 2 cups of water. 
4) Stir completely until gravy is throughout the dish. 
5) Let cook until noodles look done (still on high) 

Serve with your favorite vegetable and bread. 


Homemade French Fries
This will help you out if you are tired of buying so many bags of fries from the grocery store.
2 lbs of potatoes                           3 cups of All Purpose Flower
2 cups of cold water                     2 tbsp of sea salt
3 tbsp of season salt                 2 tbsp of pepper
2 cups of vegetable frying oil

1).  Peel the potatoes and cut them into French fries shape. (I like mine kind of thick so mine are more so like steak fries).
2).  Place the pieces of potatoes in the cold water.  This will help them not to turn brown from the air.
3).  Place oil in a deep fryer or a skillet.  Heat oil at 350 degrees
4). While the oil is getting ready, get a mixing bowl and place the flour, sea salt, season salt, and pepper to blend together.
5). Place a couple of French fries in the batter and make sure each end of the fry is covered with the batter.
6). Place the battered fry in the oil one by one.  Cook until golden brown. 


Taco soup

1lb of ground chuck
2 cans of Red Kidney Beans
2 cans of Chili Beans
2 cans of Black Beans
1 can of whole kernel corn
1 - 10oz can of tomato sauce
2 - 10oz can of diced tomatoes with green chilies
1/2 cup seasoning of Taco Seasoning
1) Cook ground chuck thoroughly.  Drain grease off completely.
2) In a large pot, mix in meat, beans, corn, tomato sauce, and diced tomatoes.
3) On medium heat, combine all of the mixings to blend together before mixing taco seasoning.
4) Once mixing has blended together, add taco seasoning.  
5) Stir thoroughly.  Let simmer on medium heat.
6) Add 1 cup of water to clear out the thickness of soup.
To kick up your serving, you can add chopped green onions, shredded cheese, and 1 tsp scoop of sour cream.

Serve with tortilla chips and enjoy!

Homemade Chicken Noodle Soup! 

(1) 2-pound chicken breast
2 ½ cups of egg noodles
½ cup of diced onions
1 cup of cut celery
1 cup of cut carrots
1 tblsp of butter
1 tblsp of basil leaves (chopped finely)
1 tblsp of oregano
Salt and pepper to taste
32 oz of Chicken Broth
14 oz can of Vegetable Broth
2 cups of water

1)      Cut your uncooked chicken breast into cube chunks
2)      Boil your chicken cube chunks
3)      Take and melt butter in a non-stick skillet.
4)      Pour diced onions into butter to soften.
5)      After onions have become a light golden brown look, take skillet off of heat.
6)      Once your chicken is done, drain the water off and rinse off chicken with cold water. This will remove the residue off of cooked chicken.
7)      In a large boiler, pour in the chicken and vegetable broth.
8)      Then you pour in the carrots, celery, and the buttered onions. Take a couple of stirs of the liquid mix as it heats up.
9)      Add in cooked chicken chunks, basil leaves, and oregano.
10)  Let the vegetables, chicken, and season cook for 20 minutes.
11)  After vegetables, chicken and season have cooked thoroughly, add egg noodles to mixture. Give one big stir.
12)  Add in your water and let cook until noodles have cooked completely. 
13)  Add salt and pepper to taste.
